Sweet Potato Tuna Boats
This recipe is one my favorites for when I want to make something fast, yet satisfying.
Its full of protein, vitamins, minerals, and it’s super tasty.
It is also gluten free.
Ingredients:

2 sweet potatoes

1 TBS. Oil of your choice (Olive oil, coconut oil)

1 tsp sea salt

1 tsp dark brown sugar
-
sprinkle of cayenne pepper

1 can of tuna
-
1 ripe avocado
-
¼ tsp smoked paprika
-
¼ tsp cayenne pepper
-
salt and pepper to taste

Optional: grated (sharp) cheddar cheese
Directions:

Preheat oven to 400 degrees F.

Cut two sweet potatoes in half. Cut a slit in each of the four halves, but not all the way through the potato. Drizzle each half with a little olive oil. On the potatoes sprinkle sea salt, dark brown sugar, and cayenne pepper. Place in oven and roast for 25-30 minutes. While your potatoes bake, open your can of tuna and transfer to a separate bowl. Add in a ripe avocado, salt, pepper, cayenne pepper, and smoked paprika. Combine tuna mixture and stir until well blended. Set aside. After your potatoes have finished baking, transfer tuna mixture into each half and serve immediately. OPTIONAL: sprinkle sharp cheddar cheese on top and bake for and additional 2 minutes or until cheese is melted.
