Chocolate covered strawberry bliss balls
Valentine’s Day inspired!
Say “hello” to my chocolate covered strawberry bliss balls. It’s like a strawberry cake bite covered in smooth dark chocolate. A nice little sweet treat perfect for you and your sweetie. Made with real strawberries and contain 0 refined sugar. Vegan, gluten free and dairy free. I hope you love them as much as we did!
Serving Size: 8-10 balls
Prep time: 15 minutes
Cooling Time: 5 minutes
Total Cook Time: 20 minutes
Ingredients:
1/3 cup almond flour
3 tablespoons coconut flour
2 tablespoons ground freeze dried strawberries
¼ cup melted then cooled coconut oil
2 tablespoons honey or maple syrup
chocolate coating:
1, 3 oz. dark chocolate bar (I used Theo’s dark chocolate bar)
1 teaspoon coconut oil
Directions:
Step 1
Using a food processor or blender, grind up about a handful of freeze dried strawberries until a nice, fine powder appears. Set aside.
Step 2
In a large bowl, combine all dry ingredients from almond flour to dried strawberry powder. Whisk until well combined.
Step 3
Add melted coconut oil and honey to your dry ingredients. Mix with a fork until well combined. At this point a thick light pink dough should form.
Step 4
Line a plate with parchment paper and begin making dough balls with your strawberry dough. Using a tablespoon scoop out dough and roll into 2 inch balls. Set each ball on lined plate and place in the freezer for 2 minutes while you melt your chocolate for the coating.
Step 5
While your dough balls are setting in the freezer, break up your chocolate bar into small pieces and place in a microwavable bowl. Add your teaspoon of coconut oil to the chocolate and microwave for 30 second increments until chocolate is all the way melted. Make sure to stir after each 30 seconds.
Step 6
Remove your strawberry dough balls from freezer and begin coating with melted chocolate. Take a teaspoon and pour a little chocolate over each dough ball until evenly coated. Top with some extra strawberry powder for a nice little pop of pink! Store in refrigerator for at least 5 minutes so chocolate can harden. Store in an airtight container for up to a week. No refrigeration required after chocolate has hardened.
