Raspberry and Fig Chia pudding (Loaded up)
Figs are officially in season! Yay! I love figs! Funny story- I was actually introduced to them a few years back by a friendly neighbor while dancing my face off at a music festival. Ever since I’ve scouted them out as the summer begins to end the fall sneaks its way up. They’re such a little treasure to enjoy and are full of rich natural sugars, fiber and magnesium. I absolutely adore figs because they’re sweet and I can incorporate them in so many meals. For example, today I created a raspberry fig chia pudding with the works. I added all sorts of good fats, vitamins, and fiber to keep me moving throughout the day. The figs and raspberry pair so well today in this rich energy supplying pudding. Chia pudding is perfect for any busy lifestyle because its quick, easy to make and lasts for up to a week. It pairs well with all sorts of yummy food and gives you energy to kick ass. Did I also mention its cheap? All in all, this treat is my go to when I know I’m going to have a busy week (So pretty much every week). Below are the simple directions and ingredients to make your fav chia pudding. Enjoy and stay sweet!
- Cinnamon Vanilla Chia Cup
- 1 Tbs. Chia seeds
- ½ cup rolled oats
- ½ tsp. cinnamon
- ¼ tsp. vanilla extract
- 1 Tbs. almond butter
- 1 Tbs. agave or honey
- 1 cup almond or coconut Milk
- Berry Chia Cup
- 1 Tbs. chia seeds
- ½ cup rolled oats
- ¼ tsp. almond or vanilla extract
- ½ cup mixed berries
- 1 Tbs. agave or honey
- 1 cup almond or coconut milk
- Banana Nut Chia Cup
- 1 Tbs. chia Seeds
- ½ cup rolled oats
- ½ tsp cinnamon
- 1 Tbs. nut butter (peanut butter, almond butter, or cashew butter)
- 1 Tbs. agave or honey
- 1 cup almond or coconut milk
Directions:
Combine all ingredients in a plastic airtight container or mason jar. Shake until well blended and store in refrigerator overnight. Add desired toppings and enjoy for the rest of the week!
**Notes: To make the picture above follow the directions to the cinnamon vanilla chia pudding. In a separate mason jar mash up six fresh raspberries. Pour Chia seed mixture on top to create the second layer. Add in sliced fig, berries and creamy almond butter. Then sprinkle the top with
your favorite toppings. I personally love bee pollen, pumpkin seeds and coconut. Enjoy! #staysweet
