Chocolate covered strawberries are one my FAVROTIE desserts on this entire planet. Ben and Jerry’s ice-cream is also on this planet, so that’s saying a lot!
This Valentine’s Day I decided to shake things up and add a little twist to my chocolate covered strawberries. Since I love peanut butter and jelly I decided why not try peanut butter and strawberries?? Then suddenly it all came together and I realized a peanut butter stuffed chocolate covered strawberry sounded like the best idea I’ve had in a while!
What’s even more remarkable about this recipe is its VEGAN, Gluten free, AND only take 10 minutes to make! YES 10 minutes!! It’ll be the cheapest, easiest valentines gift you’ll ever have to make. So, let’s get started!
First, you’ll need
Ingredients:
- 1 container of fresh organic strawberries
- 1 packet of Enjoy Life dark chocolate chips
- 1 tsp. coconut oil
- 1 Tbs. organic peanut butter
- OPTIONAL: shredded coconut, shaved almonds
Directions:
First, I cut the top off of the strawberry and carve out the inside. You only have to scrape out a little from the strawberry to stuff it with peanut butter. Just make sure you take your time so you don’t cut yourself. Next, I take a butter knife and spread the peanut butter inside the carved-out center of the strawberry. Then I melt the chocolate chips and coconut oil together in the microwave for 30 seconds. I take it out of the microwave give it a stir and then put in back in the microwave for another 30 seconds. When the chocolate has completely melted I then stick a toothpick through the peanut butter filled strawberry and drizzle in with chocolate until its fully covered. Linea plate for your chocolate covered strawberries to dry on. After I’ve covered each of my strawberries I place them in the refrigerator for about 2-3 minutes for them to fully harden. I also sprinkled a few of my strawberries with shredded coconut and shaved almonds, but they also taste just as amazing without the toppings. It’s whatever you prefer!
